Martini Chicken

I don’t know anybody that loves green olives as much as Jamie.  I swear we must have at least 3 different types of green olives in the ice box at all times.  I mean I love olives too, but probably not as much as he does.  He also loves martinis.  So one of his favorite dishes that I make for dinner is Martini chicken.  It’s super easy and quick.  I don’t remember where I found the recipe, but over time I’ve kinda just changed it up to our tastes.  If you like olives you have to try it!

Ingredients:  Chicken thighs, garlic, butter, green olives, sliced (I used half garlic stuffed and half jalapeno stuffed), olive oil, vermouth, and gin.  Dang it I forgot to take a pic of the lemon juice also.  I always do that!
loves (3)Brown the chicken in a little olive oil.   Add a couple tbs. of butter and garlic, saute until the chicken is done, then add chopped olives along with the juice.  (about 1/4 cup, depending how much olives you want).  Then add 1/4 C of Gin, 1 tbs vermouth, and 1 tbs. lemon juice.  I also add a little water if I think it tastes too strong.  Simmer about 20 min. and then serve over pasta.  Top with fresh cracked pepper.
It sounds strange, but it really is delish!  It has a tangy flavor, but after the olives have simmered it is very subtle and not too overwhelming.
