Ground Pork Omelet

Here’s a recipe for one of my favorite quick comfort foods, a ground pork omelet.  Now I don’t consider myself a good cook or anything, but I love to make food and share/exchange recipes with friends.  It has to be one my family's traditions, making a ton of food and just eating and having fun together.  I love it.  My Grandma was always concerned whether or not people had eaten or if they wanted to take food home.  I miss that about her.  This recipe sort of reminds me of her; she used to love eggs and eat them almost everyday, just like me.
Ingredients:

• Ground pork (around 6 oz)
• 3 eggs
• 1 TBS Fish Sauce
• Pepper

 
Scramble the eggs and mix in the pork.  Add the fish sauce and some pepper.  It seems like a lot, and it smells bad, but trust me.  It makes is soooo good!
Fry it up in a little oil.
I just had to take a bite before I remembered to take a picture.  I couldn’t resist.  It’s also good with Sriracha, that Thai hot sauce.
